Ingredients

  • 1 3/4 cups flour
  • 1/4 cup sugar
  • 2 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup cooking oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grease or line 12 muffin cups.
  3. Mix dry ingredients—flour, sugar, baking powder, and salt—with a wooden spoon.
  4. Beat the egg in a separate bowl.
  5. Add milk and cooking oil to the beaten egg and stir until well mixed.
  6. Pour the milk mixture over the dry ingredients and stir until just combined; the batter should be lumpy.
  7. Spoon half of the batter into the muffin cups until they are one-third full.
  8. Place a teaspoonful of jelly on top of the batter in each cup.
  9. Cover the jelly with the remaining batter, filling each cup.
  10. Bake for 20 to 25 minutes until golden brown.
  11. Cool the muffins for 5 minutes before serving.
