Ingredients

  • 4 c. sifted all-purpose flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 c. shortening
  • 1 c. molasses
  • 3 eggs
  • 1 c. milk
  • dried apples, cooked and flavored with spices or canned applesauce
  • 10x sugar

Instructions

  1. Sift together flour, salt, baking powder, and baking soda.
  2. Set aside. Work shortening until soft.
  3. Add sugar gradually while creaming the mixture.
  4. Mix in molasses thoroughly.
  5. Beat in eggs, one at a time.
  6. Stir in the flour mixture and milk alternately.
  7. Spoon a thin layer of batter, about 1/4-inch thick, into a greased 9-inch cake pan.
  8. Bake in a preheated oven at 350°F for about 15 to 20 minutes, until the cake pulls away from the sides of the pan.
  9. Repeat baking and layering until all batter is used, 6 to 7 layers.
  10. Once cooled, stack the layers with generous amounts of dried fruit or lightly spiced applesauce between each.
  11. Sprinkle with 10x sugar before serving.
