Ingredients

  • 1/2 cup butter
  • 1 cup powdered sugar
  • 1 cup crushed pineapple, drained
  • 2 eggs
  • vanilla wafers
  • 1/2 pint whipping cream, whipped
  • 2 fresh coconuts, shredded or 2 packages frozen coconut

Instructions

  1. Cream the powdered sugar and butter together.
  2. Add beaten eggs to the mixture.
  3. Stir in drained crushed pineapple.
  4. Spread the mixture between vanilla wafers to form sandwiches.
  5. Cover the assembled desserts with whipped cream.
  6. Roll the desserts in shredded or frozen coconut.
  7. Refrigerate before serving.
