Ingredients

  • 1 cup white sugar
  • 1 tablespoon butter
  • 2 tablespoons flour
  • a pinch of salt
  • grated rind of 1 lemon
  • juice of 1 lemon
  • 1 cup milk

Instructions

  1. Cream the sugar and butter together until well blended.
  2. Add the flour, salt, grated lemon rind, lemon juice, well-beaten egg yolks, and milk. Mix thoroughly.
  3. Fold in stiffly beaten egg whites gently into the mixture.
  4. Pour the batter into a pudding dish.
