Ingredients

  • 20 frozen potato skins
  • 1 pkg. Lipton chicken vegetable soup mix
  • 1 c. mayonnaise
  • 1 box frozen Birds Eye chopped spinach, thawed
  • 1 (8 oz.) carton sour cream
  • 1 can chopped water chestnuts
  • 1 pkg. shredded Cheddar cheese
  • bacon bits

Instructions

  1. Mix the soup mix, thawed spinach, sour cream, mayonnaise, and chopped water chestnuts in a bowl.
  2. Place the potato skins cut side up on a cookie sheet and bake at 425°F for approximately 14 minutes.
  3. Remove from oven and fill each skin with the prepared mixture.
  4. Top each filled skin with shredded Cheddar cheese and bacon bits.
  5. Bake for an additional 10 to 15 minutes at 350°F until cheese is melted and bubbly.
