Ingredients

  • 3/4 cup crushed saltines (20 crackers)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1/8 to 1/4 teaspoon rubbed sage
  • 3 tablespoons Dijon mustard
  • 4 boneless pork loin chops (1/2-inch thick)
  • 1/4 cup vegetable oil

Instructions

  1. In a bowl, combine crushed saltines, dried thyme, pepper, and rubbed sage.
  2. Spread Dijon mustard on both sides of each pork chop.
  3. Coat the mustard-covered pork chops with the cracker mixture.
  4. In a skillet, heat vegetable oil over medium-high heat.
  5. Cook the pork chops in the oil for 4 to 5 minutes on each side or until browned and juices run clear.
