Mushroom Rolls

Delightful mushroom-filled rolls with a creamy, savory filling, crispy coating, perfect as appetizers or snacks for gatherings and mushroom lovers alike.

Ingredients

  • 1/2 lb. mushrooms, finely chopped
  • 1/4 c. butter
  • 3 Tbsp. flour
  • 3/4 tsp. salt
  • 1 c. half and half coffee cream
  • 1 tsp. lemon juice
  • 2 tsp. finely chopped chives
  • 1/2 loaf white bread, with crusts removed
  • 1 box cornflake crumbs

Instructions

  1. Saute chopped mushrooms in butter for 5 minutes.
  2. Cool the mushroom mixture and add flour, blending well; then add salt.
  3. Stir in half and half coffee cream and blend thoroughly.
  4. Cook the mixture until thick, stirring constantly.
  5. Add lemon juice and chopped chives; cool the filling.
  6. Roll slices of white bread flat and spread the mushroom mixture on the bread as for jelly roll.
  7. Freeze the rolled bread lightly, then cut into thirds.
  8. Dip the bread rolls in melted butter, then coat with crushed cornflake crumbs.
  9. Bake at 400°F (200°C) for 10 minutes until light brown.
