Mushroom Rolls

- Saute chopped mushrooms in butter for 5 minutes.
- Cool the mushroom mixture and add flour, blending well; then add salt.
- Stir in half and half coffee cream and blend thoroughly.
- Cook the mixture until thick, stirring constantly.
- Add lemon juice and chopped chives; cool the filling.
- Roll slices of white bread flat and spread the mushroom mixture on the bread as for jelly roll.
- Freeze the rolled bread lightly, then cut into thirds.
- Dip the bread rolls in melted butter, then coat with crushed cornflake crumbs.
- Bake at 400°F (200°C) for 10 minutes until light brown.
