  • 1/2 tsp. dried thyme
  • 2 c. chicken stock
  • 8 boneless skinless chicken breast halves

  2. Add shallots, mushrooms, and 1 teaspoon pepper; sauté until vegetables brown, about 8 minutes.
  3. Add wine and bring to a boil.
  4. Add rosemary and thyme sprigs; simmer for 5 minutes.
  5. Add chicken stock; increase heat to medium-high and boil until liquid is reduced to 3/4 cup, about 20 minutes.
  6. Strain the sauce into a saucepan. Cover and refrigerate if making ahead.
  7. Prepare the barbecue (medium-high heat) or preheat the broiler.
  8. Sprinkle remaining 4 teaspoons pepper over both sides of the chicken breasts.
