- Combine chopped green tomatoes and onions in a large container and add 3 tablespoons salt. Cover with cold water and let sit for 10 to 12 hours.
- Drain vegetables and rinse well.
- Combine the drained green tomatoes, onions, and chopped green and red bell peppers in a large pot.
- Add enough water to cover the vegetables.
- Bring to a boil and cook for 10 minutes, until onions are clear but not mushy.
- Drain and set aside to cool.
