Ingredients

  • 12 c. green tomatoes, chopped
  • 2 1/2 c. onions, chopped
  • 6 large green and red bell peppers, chopped

Instructions

  1. Combine chopped green tomatoes and onions in a large container and add 3 tablespoons salt. Cover with cold water and let sit for 10 to 12 hours.
  2. Drain vegetables and rinse well.
  3. Combine the drained green tomatoes, onions, and chopped green and red bell peppers in a large pot.
  4. Add enough water to cover the vegetables.
  5. Bring to a boil and cook for 10 minutes, until onions are clear but not mushy.
  6. Drain and set aside to cool.
