Ingredients

  • 3 eggs
  • 1 cup sugar
  • 1/2 cup margarine, melted and cooled
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup almonds, ground fine
  • 1 tablespoon anise extract
  • 2 teaspoons vanilla extract
  • 1/2 cup maraschino cherries (optional)

Instructions

  1. Beat eggs and sugar together until well combined.
  2. Add cooled margarine, anise extract, and vanilla extract to the egg mixture.
  3. In a separate bowl, mix together flour, baking powder, salt, ground almonds, and maraschino cherries if using.
  4. Gradually add the dry mixture to the creamed mixture and combine.
  5. Shape the dough into two logs and place them on a cookie sheet.
  6. Bake for 25 minutes at 375°F.
  7. Remove from oven, let cool slightly, then slice into one-inch pieces.
  8. Toast the slices on both sides until golden brown.
