Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1 Tbsp. baking powder
  • 1 1/4 c. milk or 1 c. milk and 1 mashed banana
  • 1 beaten egg
  • 1/4 c. vegetable oil
  • 1/2 c. walnuts or raisins

Instructions

  1. Mix dry ingredients together in a bowl.
  2. Add milk (or milk and mashed banana), beaten egg, vegetable oil, and walnuts or raisins.
  3. Stir until evenly moist, but do not overbeat.
  4. Pour the batter into greased muffin cups.
  5. Bake at 400°F for 18 minutes.
