Ingredients

  • 20 Ritz crackers
  • 1 cup chopped pecans
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3 egg whites
  • 1/2 pint heavy cream
  • chocolate shavings

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Chop the Ritz crackers and pecans in a blender.
  3. Gradually add sugar and baking powder to the mixture.
  4. Add vanilla extract.
  5. Beat egg whites until stiff peaks form and fold them into the blender mixture.
  6. Pour the mixture into a greased 8-inch pie plate.
  7. Bake for 30 minutes until set and lightly golden.
  8. Remove from oven and cool completely.
  9. Whip the heavy cream with sugar to taste until soft peaks form.
  10. Spread the whipped cream on top of the cooled torte.
  11. Garnish with chocolate shavings.
  12. Refrigerate for at least 3 hours before serving.
