Nachos Pie

Ingredients

  • 1 tbsp olive oil
  • 1 None onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb ground beef
  • 2 tsp smoked paprika
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tbsp flour
  • 1 can (14 oz) diced tomatoes
  • 2 tsp sugar
  • 1 1/3 cups sour cream
  • 1 cup grated Cheddar cheese
  • 7 oz tortilla chips, crushed into cornflake-sized pieces
  • None None iIeberg lettuce, tomato wedges and salsa, to serve

Instructions

  1. Preheat the oven to 425°F. Heat oil in a large skillet on medium heat. Cook onion and garlic, stirring, for 5 mins, or until softened.
  2. Increase heat to high. Add ground beef; cook, stirring, for 5 mins, breaking up lumps, until browned lightly. Add spices; cook, stirring, for 1 min, or until fragrant. Sprinkle in flour; cook, stirring, for 1 min. Add tomatoes, sugar and 1/2 cup water; season. Simmer for 5 mins, or until thickened. Taste, adding more salt if needed.
  3. Spread in bottom of a 1 1/2-quart baking dish. Cool for a few mins. Spread sour cream on top, then sprinkle with cheese. Sprinkle with tortilla chips.
  4. Bake for 20 mins, or until cheese is melted and golden. Serve with lettuce, tomatoes and salsa.
