Ingredients

  • 2 10-inch iron skillets cornbread
  • 1/2 medium loaf white bread
  • 1 large bunch celery
  • 2 cups onion
  • 8 medium eggs
  • 1 pint oysters and liquid
  • salt
  • 4 tablespoons sage
  • 1 stick oleo
  • 3 quarts chicken or turkey broth
  • 5 chicken bouillon cubes

Instructions

  1. Mix hot chicken or turkey broth, bouillon cubes, and oleo; let stand until bouillon cubes are broken up.
  2. Break all the bread into small pieces and put in a large pan.
  3. Add chopped celery and onions to the bread.
  4. Add sage and stir well.
  5. Add the broth mixture and mix well.
  6. Chop oysters and add them along with their liquid to the mixture.
  7. Add beaten eggs and mix thoroughly.
  8. Adjust salt to taste.
  9. Ensure there is enough liquid to see after standing a few minutes.
  10. Bake in a covered roaster pan at 350°F for about 2 hours or until done.
