Ingredients

  • 4 large chicken breasts
  • 1/2 tsp. salt
  • 1/4 to 1/2 tsp. black pepper
  • 2 Tbsp. olive or salad oil
  • 2 Tbsp. butter or margarine
  • 3 Tbsp. green onions, chopped
  • Juice of 1/2 lemon
  • 2 Tbsp. parsley, chopped
  • 2 tsp. Dijon mustard
  • 1/4 cup chicken broth

Instructions

  1. Place chicken breasts between sheets of plastic wrap.
  2. Pound slightly with a mallet, then sprinkle with salt and black pepper.
  3. Heat 1 tablespoon oil and 1 tablespoon butter in a large skillet.
  4. Cook chicken over high heat for 2 minutes on each side.
  5. Transfer cooked chicken to a warm serving platter.
  6. Add green onions and lemon juice, parsley, and mustard to the skillet and cook for 15 seconds, stirring constantly.
  7. Stir in chicken broth until smooth.
  8. Add remaining 1 tablespoon butter and 1 tablespoon oil to the skillet.
  9. Pour the sauce over the cooked chicken and serve immediately.
