Ingredients

  • 3 yellow squash, sliced
  • 3 small zucchini squash, sliced
  • 1 onion, sliced
  • 1/4 tsp garlic powder
  • salt to taste
  • 1 qt canned tomatoes
  • Parmesan cheese
  • 1/2 stick margarine

Instructions

  1. In a large skillet, melt the margarine over medium heat.
  2. Add sliced yellow squash, zucchini squash, and onion.
  3. Sprinkle with garlic powder and salt to taste.
  4. Cook until vegetables are crisp-tender, about 10 minutes.
  5. Add canned tomatoes and cook until heated through, about 5 minutes.
  6. Sprinkle with Parmesan cheese before serving.
  7. Serve hot over rice.
