Ingredients

  • 3 1/2 c. flour
  • 3 c. sugar
  • 2 tsp. soda
  • 1 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 4 eggs
  • 2/3 c. water
  • 1 c. oil
  • 2 c. canned pumpkin (No. 303 can)
  • 1/2 c. pecans, chopped
  • 1/2 c. raisins

Instructions

  1. Sift all the dry ingredients together and mix well.
  2. Add remaining ingredients and blend until smooth.
  3. Divide into 4 greased and floured 1-pound coffee cans.
  4. Bake at 350° for 1 hour. Turn out of cans onto a rack.
  5. Wrap in foil.
  6. Make at least 1 day ahead.
  7. Can also be baked in loaf pan for 1 hour.
