Ingredients

  • 1 pie crust
  • 1 (4 3/4 oz.) pkg. vanilla cook and serve pudding
  • 2 envelopes Knox gelatine
  • 4 eggs, separated
  • 3 c. milk
  • pinch of salt
  • 1/4 c. sugar
  • 1/2 c. chopped cherries
  • 1/2 c. chopped nuts
  • 1/2 c. raisins
  • 1/2 tsp. vanilla

Instructions

  1. Make and bake a basic pie crust.
  2. Prepare the vanilla pudding according to package instructions using 3 cups of milk.
  3. Dissolve the gelatine in a small amount of cold water and then heat gently until dissolved.
  4. Separate the eggs, whisk the yolks into the pudding mixture, and cook briefly if needed to thicken.
  5. Allow the pudding to cool slightly.
  6. In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
  7. Gradually add sugar to the egg whites and beat until glossy.
  8. Fold the gelatine and vanilla into the pudding mixture, then gently fold in the egg whites.
  9. Stir in chopped cherries, nuts, raisins, and vanilla.
  10. Pour the filling into the baked pie crust and chill until set, at least 4 hours or overnight.
