- Make and bake a basic pie crust.
- Prepare the vanilla pudding according to package instructions using 3 cups of milk.
- Dissolve the gelatine in a small amount of cold water and then heat gently until dissolved.
- Separate the eggs, whisk the yolks into the pudding mixture, and cook briefly if needed to thicken.
- Allow the pudding to cool slightly.
- In a separate bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- Gradually add sugar to the egg whites and beat until glossy.
- Fold the gelatine and vanilla into the pudding mixture, then gently fold in the egg whites.
- Stir in chopped cherries, nuts, raisins, and vanilla.
- Pour the filling into the baked pie crust and chill until set, at least 4 hours or overnight.
