Deliciously tender new potatoes with bright lemon and fresh chives or parsley, perfect as a side dish for family dinners or casual gatherings.

Ingredients

  • 3 lb. small new potatoes
  • boiling water
  • 1 tsp. salt
  • 1/2 cup butter or margarine
  • 3 Tbsp. lemon juice
  • 2 Tbsp. finely chopped chives or parsley

Instructions

  1. Scrub the potatoes and peel a strip of skin from around the center of each potato, about 1/2-inch wide.
  2. Place the potatoes in a pan and add boiling water to a depth of 2 inches.
  3. Add 1/2 teaspoon salt to the water.
  4. Bring the water to a boil.
  5. Cover and boil gently for 20 minutes or until the potatoes are tender.
  6. Drain the potatoes.
  7. Return the potatoes to the heat and cook for several minutes to dry out.
