Deliciously tender new potatoes with bright lemon and fresh chives or parsley, perfect as a side dish for family dinners or casual gatherings.

Instructions
- Scrub the potatoes and peel a strip of skin from around the center of each potato, about 1/2-inch wide.
- Place the potatoes in a pan and add boiling water to a depth of 2 inches.
- Add 1/2 teaspoon salt to the water.
- Bring the water to a boil.
- Cover and boil gently for 20 minutes or until the potatoes are tender.
- Drain the potatoes.
- Return the potatoes to the heat and cook for several minutes to dry out.
