Ingredients

  • 30 small new potatoes
  • salt to taste
  • pepper to taste
  • 1 1/2 cups fat free half and half
  • 3 tablespoons bacon drippings
  • 2 tablespoons butter
  • 2 tablespoons cornstarch

Instructions

  1. Scrape the peel off of the potatoes.
  2. Wash the potatoes well.
  3. Cover the potatoes with cold water, cover, and bring to a boil.
  4. Cook until fork tender, approximately 15 minutes after they come to a boil.
  5. Add bacon drippings and butter to the potatoes and stir.
  6. Mix cornstarch with 1 cup of half and half and add to the potatoes, stirring well.
  7. Add the rest of the half and half, salt, and pepper.
  8. Stir frequently to prevent sticking and scorching.
  9. Cook until the mixture is smooth and thickened.
  10. Garnish with chopped green onions and crispy fried bacon before serving.
