- Scrape the peel off of the potatoes.
- Wash the potatoes well.
- Cover the potatoes with cold water, cover, and bring to a boil.
- Cook until fork tender, approximately 15 minutes after they come to a boil.

- Mix cornstarch with 1 cup of half and half and add to the potatoes, stirring well.
- Add the rest of the half and half, salt, and pepper.
- Stir frequently to prevent sticking and scorching.
- Cook until the mixture is smooth and thickened.
- Garnish with chopped green onions and crispy fried bacon before serving.
