Ingredients

  • 8 oz. cream cheese, softened
  • 2 eggs, beaten
  • 3/4 cup sugar
  • 2 (3 1/2 oz.) packages instant vanilla pudding mix
  • 3/4 cup milk
  • 2 cups mashed cooked sweet potatoes
  • 1 1/2 cups Cool Whip
  • 1/2 cup chopped nuts
  • 2 (9-inch) graham cracker pie crusts

Instructions

  1. Mix together well the cream cheese and beaten eggs.
  2. Add sugar and beat until fluffy.
  3. Spread mixture into the graham cracker pie crusts and bake for 20 minutes at 350°F.
  4. Let cool.
  5. Meanwhile, mix pudding with the milk.
  6. Fold in the cooked mashed sweet potatoes, cinnamon, and Cool Whip.
  7. Blend well before serving.
