Ingredients

  • 3 Tbsp. butter
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. paprika
  • 3/4 c. light cream
  • 1/2 c. fish stock
  • 2 egg yolks
  • 2 Tbsp. dry sherry

Instructions

  1. Melt butter in a saucepan.
  2. Remove from heat, stir in flour, salt, and paprika until blended.
  3. Stir in cream and fish stock slowly.
  4. Cook over medium heat and stir constantly until the mixture thickens and comes to a boil.
  5. Boil for 1 minute.
  6. Remove from heat.
  7. In a medium bowl, beat egg yolks well.
  8. Stir in about 1/2 cup of hot sauce.
  9. Stir egg yolk mixture into the sauce in the saucepan.
  10. Add sherry.
  11. Cook over low heat, stirring until heated through.
  12. Do not boil.
