Ingredients

  • 2 Tbsp. olive oil
  • 1/2 tsp. ground cumin
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. curry powder
  • 4 c. unsalted assorted nuts
  • 1/2 tsp. garlic salt
  • 1/2 tsp. chili powder
  • 1/4 tsp. ground ginger
  • 1/4 tsp. ground red pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat; stir in ground cumin, ground cinnamon, curry powder, ground ginger, and ground red pepper.
  2. Add the assorted nuts; stir until coated with the spice mixture.
  3. Spread the coated nuts evenly in a 15 x 10 x 1-inch jelly roll pan.
  4. Bake at 325°F (160°C) for 15 to 20 minutes, stirring every 5 minutes to ensure even roasting.
  5. Remove from oven and let cool on the pan.
  6. Store in an airtight container for freshness.
