- Heat olive oil in a large skillet over medium heat; stir in ground cumin, ground cinnamon, curry powder, ground ginger, and ground red pepper.
- Add the assorted nuts; stir until coated with the spice mixture.
- Spread the coated nuts evenly in a 15 x 10 x 1-inch jelly roll pan.
- Bake at 325°F (160°C) for 15 to 20 minutes, stirring every 5 minutes to ensure even roasting.
- Remove from oven and let cool on the pan.
