Ingredients

  • 3 oz. cream cheese
  • 2 1/2 cups confectioners sugar
  • 1/2 teaspoon vanilla extract
  • dash of salt
  • food coloring (red or green)
  • 1/2 cup coconut

Instructions

  1. Beat softened cream cheese until smooth.
  2. Add confectioners sugar, blending thoroughly.
  3. Beat in vanilla extract and salt; add just enough food coloring to tint.
  4. Refrigerate, covered, for 1 hour.
  5. Shape into teaspoon-sized balls.
  6. Roll in coconut.
  7. Place on a cookie sheet, covered with wax paper, and refrigerate for several hours or until firm.
