No Bake Mini Fruit Cake

A delightful no-bake mini fruit cake that combines candied fruits, raisins, dates, and nuts, perfect for festive gatherings or a sweet, no-cook treat.

Ingredients

  • 1 pkg. spice cake mix
  • 1 1/2 cups chopped candied mixed fruits
  • 1 cup raisins
  • 1/2 cup chopped dates
  • candied cherries
  • large jar cherries
  • 1 1/2 cups chopped pecans
  • 1 cup canned applesauce
  • 2 teaspoons lemon juice

Instructions

  1. Prepare the spice cake mix according to package instructions.
  2. Allow the cake to cool completely, then crumble it into a large mixing bowl.
  3. Add chopped candied mixed fruits, raisins, chopped dates, and chopped pecans to the bowl.
  4. Using your hands, toss and mix all ingredients thoroughly.
  5. In a small bowl, combine canned applesauce and lemon juice.
  6. Pour the applesauce mixture into the cake mixture and stir until well combined.
  7. Pack the mixture into individual cups or molds.
  8. Place a candied cherry on top of each mini cake.
  9. Cover with Saran Wrap and refrigerate for 24 hours before serving.
