No Bake Mini Fruit Cake

- Prepare the spice cake mix according to package instructions.
- Allow the cake to cool completely, then crumble it into a large mixing bowl.
- Add chopped candied mixed fruits, raisins, chopped dates, and chopped pecans to the bowl.
- Using your hands, toss and mix all ingredients thoroughly.
- In a small bowl, combine canned applesauce and lemon juice.
- Pour the applesauce mixture into the cake mixture and stir until well combined.
- Pack the mixture into individual cups or molds.
- Place a candied cherry on top of each mini cake.
- Cover with Saran Wrap and refrigerate for 24 hours before serving.
