Sweet, chewy fruit balls packed with dried fruits and almonds, coated in coconut—perfect as a healthy snack or energy bite for active lifestyles and snack lovers.

Ingredients

  • 3/4 cup pitted dried prunes
  • 3/4 cup whole pitted dates
  • 1/2 cup dried apricots
  • 1/2 cup blanched whole almonds
  • 1/4 cup raisins
  • 2 tablespoons frozen orange juice concentrate
  • 2 teaspoons honey or molasses
  • 1 1/4 cups flaked coconut

Instructions

  1. In a food processor, grind prunes, dates, apricots, almonds, and raisins to a coarse mixture.
  2. Turn out the mixture into a bowl.
  3. Add orange juice concentrate and honey or molasses.
  4. Stir until well combined.
  5. Roll the mixture into 1-inch balls and roll in coconut.
  6. Store, covered, in the refrigerator.
