A flavorful, crustless spinach pie combining ricotta, mozzarella, and sautéed vegetables, perfect for a light, satisfying vegetarian meal or side dish.

Ingredients

  • 1 lb. Ricotta cheese
  • 10 oz. package spinach, cooked and drained
  • 1 cup shredded Mozzarella
  • 3 eggs, beaten
  • 2 Tbsp. oil
  • 1 tsp. onion salt
  • salt and pepper
  • 1/2 cup green pepper, sautéed (optional)

Instructions

  1. Combine ricotta cheese, cooked and drained spinach, shredded mozzarella, beaten eggs, oil, onion salt, salt, pepper, and optional sautéed green pepper and zucchini in an oiled pie plate or spring-form pan.
  2. Dot the mixture with butter.
  3. Bake at 350°F (175°C) for 35 to 40 minutes until set and golden.
