  4. Blend in the enriched flour until a stiff dough forms.
  5. Let the dough rise by placing it in a warm place (80° to 90°F) covered for 30 minutes.
  6. Alternatively, tie the dough in a tea towel, leaving space for rising.
  7. Place the risen dough in a large bowl filled with water at 75° to 80°F.
  8. Let stand until the dough rises to the top of the water, about 30 to 45 minutes.
  9. Remove the dough from the water. It will be soft and moist.
