Nomad Salad
Ingredients
- 1 1/2 cups uncooked bulgur or cracked wheat ⓘ
- 1 1/2 cups boiling water ⓘ
- 1 cup dried figs, halved ⓘ
- 1 cup chopped fresh parsley ⓘ
- 1/2 cup chopped fresh mint ⓘ
- 1/2 cup sweetened dried cranberries (such as Craisins) ⓘ
- 1/2 cup lemon juice ⓘ
- 2 tablespoons olive oil ⓘ
- 1/2 teaspoon salt ⓘ
- 1/2 teaspoon black pepper ⓘ
Instructions
- Combine the bulgur and boiling water in a large bowl. Cover and let stand 30 minutes. Stir in the figs and remaining ingredients; cover salad and chill thoroughly.
