Ingredients

  • 6 eggs
  • 1 1/2 cups vegetables, shredded or thinly sliced (onions, zucchini, broccoli, asparagus)
  • 1 1/2 cups olive oil
  • parsley to taste
  • salt to taste
  • pepper to taste

Instructions

  1. Beat the eggs in a bowl.
  2. Add salt, pepper, Parmesan cheese, and the shredded or sliced vegetables to the eggs and mix well.
  3. Pour the batter into a round 9-inch oiled pan or a 9 x 9-inch square pan.
  4. Bake in a preheated oven at 375°F (190°C) for 45 minutes until set and golden.
  5. Serve warm or cold, garnished with parsley.
