Ingredients

  • 6 medium zucchini (1 1/2 lb.)
  • 1/2 cup butter
  • 3 cloves garlic
  • 1 medium onion
  • 1 cup chopped fresh tomato
  • 1 cup cooked rice
  • 1 teaspoon oregano leaves (dried)
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne
  • 3/4 cup Parmesan cheese, grated

Instructions

  1. Wash zucchini; cut off stems.
  2. Cut each zucchini in half crosswise.
  3. In a large saucepan, cook zucchini in boiling water with 1/2 teaspoon salt, covered, for 5 minutes or until just tender.
  4. Drain well; cool and scoop out seeds.
  5. In a skillet, melt butter.
  6. Saute garlic until golden; remove and discard.
  7. Add onion; saute until golden.
  8. Add tomato, rice, oregano, salt, and cayenne; toss with a fork to mix well.
