Ingredients

  • 3 cups self-rising flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon soda
  • 3 eggs
  • 1 cup Crisco
  • 1 (8 oz) can crushed pineapple and juice
  • 1 1/2 cups chopped pecans
  • 2 cups chopped bananas

Instructions

  1. Mix all dry ingredients together in a bowl.
  2. In a separate bowl, mix eggs, Crisco, crushed pineapple with juice, chopped bananas, and chopped pecans.
  3. Add the dry ingredients to the wet mixture and stir with a large spoon until combined.
  4. Pour the batter into a tube pan or sheet pan.
  5. Bake at 300°F (150°C) for about 1 hour, or until sides are loose and the top is brown.
