Ingredients

  • 2 1/2 cups sifted flour
  • 1/2 teaspoon salt
  • 5 teaspoons baking powder
  • 1 well-beaten egg
  • 1 cup sugar
  • 3 tablespoons melted shortening
  • 1 cup nuts
  • 1 cup raisins
  • 1 tablespoon flour

Instructions

  1. Preheat a skillet until almost smoking.
  2. Turn the burner down to low.
  3. Mix 1 to 1 1/2 cups of self-rising cornmeal mix, milk, and the well-beaten egg in a bowl.
  4. Optionally, add chopped onion and/or sour cream to the batter.
  5. Add water if needed to make the batter thin like cake batter.
  6. Pour the batter into the hot skillet and place a lid on top.
  7. Let the batter cook, then turn it over to cook the other side.
  8. Crack the lid open to let the steam escape so the cornbread does not become soggy.
