Ingredients

  • 2 cups sugar
  • 3/4 cup light cream
  • 2 squares (2 oz.) unsweetened chocolate
  • 2 tablespoons light or dark corn syrup
  • 2 tablespoons butter
  • 1 tablespoon vanilla
  • 1 cup walnuts, broken coarsely

Instructions

  1. In a heavy 1 1/2-quart saucepan over low heat, stir together the sugar, cream, chocolate, and syrup until the sugar and chocolate are melted.
  2. Continue cooking very slowly, stirring often, until the mixture reaches 238°F on a candy thermometer, or forms a soft ball when a small amount is dropped into cold water.
  3. This process may take about an hour.
  4. Remove from heat; add butter without stirring.
  5. Allow to cool.
  6. Add vanilla and beat with a wooden spoon until the mixture has lost almost all its gloss and requires considerable beating.
  7. Stir in the chopped walnuts.
  8. Pour the mixture into a buttered 8 x 8 x 2-inch cake pan.
  9. Chill until the fudge is firm.
  10. Cut into squares and remove with a small metal spatula.
  11. Arrange the fudge squares on a plate.
  12. Cover with a cake dome or bowl and leave at room temperature to keep the inside creamy.

Tips & Substitutions

For a smoother texture, ensure the sugar is fully dissolved before reaching the desired temperature. If you prefer, you can substitute pecans for walnuts for a different flavor. Make sure to use a heavy-bottomed saucepan to prevent the fudge from burning. If you want a richer taste, consider adding a pinch of sea salt to enhance the sweetness.

Serving Suggestions

Serve the nut fudge as a delightful dessert or snack, perfect alongside a cup of coffee or tea. It also pairs beautifully with 10 O'Clock Rolls for a cozy brunch. For added indulgence, consider drizzling melted chocolate over the fudge squares or serving with a scoop of vanilla ice cream.

Storage & Reheating

Store any leftover fudge in an airtight container at room temperature for up to a week. If you prefer a firmer texture, refrigerate it. Avoid freezing, as it can alter the texture. When ready to enjoy, simply cut pieces and let them sit at room temperature for a few minutes to soften slightly.

Frequently Asked Questions

Can I use milk chocolate instead of unsweetened chocolate?

Yes, you can use milk chocolate, but it will change the flavor and sweetness of the fudge. Be sure to adjust the sugar accordingly, as milk chocolate is sweeter than unsweetened chocolate. This may result in a creamier texture and a different taste profile.

What if my fudge doesn't set properly?

If your fudge doesn't set, it may not have reached the right temperature. You can reheat it gently and cook it a bit longer, monitoring the temperature closely. Alternatively, you could pour it into a larger dish and chill it, using it as a topping for ice cream or other desserts.

Can I add other ingredients to the fudge?

Absolutely! Feel free to experiment by adding dried fruits, such as cranberries or raisins, or different nuts like almonds or hazelnuts. Just be mindful of the total volume to ensure the fudge sets properly. Each addition can create a unique twist on this classic recipe.
