Nutted Wild Rice combines hearty wild rice with crunchy pecans, sweet raisins, and fresh orange flavors, making it a delightful side suitable for festive or everyday meals.

Ingredients

  • 1/2 lb wild rice
  • 1 cup pecan halves
  • 1 cup golden raisins
  • Grated rind of 1 orange
  • 1/4 cup chopped fresh mint
  • 4 green onions
  • 1/4 cup olive oil
  • 1/3 cup fresh orange juice
  • 1 1/2 teaspoons salt
  • Freshly ground pepper

Instructions

  1. Place rice in a strainer and rinse in cold water.
  2. Put rice in a heavy saucepan.
  3. Add 5 1/2 cups chicken stock to the saucepan.
  4. Bring the mixture to a rapid boil.
  5. Reduce heat to simmer and cook uncovered for 45 minutes, checking after 30 minutes to prevent over-softening.
  6. Put a thin towel in a colander.
  7. Drain the cooked rice and place it in a bowl.
  8. Add pecan halves, golden raisins (if using), grated orange rind, chopped mint, sliced green onions, olive oil, orange juice, salt, and pepper.
  9. Mix well and let stand for 2 hours to develop flavors.
  10. Serve at room temperature.
