Ingredients

  • 2 acorn squash (1 lb. each)
  • 3/4 cup cracker crumbs
  • 1/3 cup coarsely chopped pecans or walnuts
  • 1/3 cup butter or oleo, melted
  • 3 tablespoons brown sugar
  • 1/2 tablespoon salt
  • 1/4 teaspoon nutmeg

Instructions

  1. Cut the acorn squash in half and remove the seeds.
  2. Mix cracker crumbs, chopped pecans or walnuts, melted butter, brown sugar, salt, and nutmeg.
  3. Spoon one-quarter of the mixture into each squash half.
  4. Place the stuffed squash in an ungreased baking dish measuring 13 1/2 x 9 x 2 inches.
  5. Season the cut sides of the squash with salt and butter.
  6. Pour water into the dish to a depth of 1/4 inch.
  7. Cover the dish with foil and bake in a 400°F oven for 30 minutes or until the squash is tender.
