Ingredients

  • 2 cups flour
  • 1 cup oat flour
  • 1 cup oats
  • 1/2 cup salad oil
  • 1 cup brown sugar
  • 1 can crushed pineapple
  • 4 green apples, cut up
  • 1 mashed banana
  • 3 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon allspice

Instructions

  1. Mix dry ingredients (flour, oat flour, oats, soda, salt, cinnamon, cloves, allspice) and set aside.
  2. In a separate bowl, mix oil, brown sugar, eggs, and mashed banana.
  3. Stir the dry ingredients into the wet mixture until just combined; batter will be lumpy.
  4. If the batter is too dry, add skim milk gradually until the desired consistency is reached.
  5. Fold in crushed pineapple and chopped green apples.
  6. Pour the batter into two loaf pans or a 9x13-inch pan, optionally adding nuts on top.
  7. Bake at 350°F for 60 minutes or until a toothpick inserted into the center comes out clean.
