Ingredients

  • 4 eggs
  • 2 cups sugar
  • 1 cup corn oil
  • 1 cup buttermilk
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 2 teaspoons coconut flavoring
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 325°F (163°C). Grease and flour a 10-inch tube pan.
  2. Beat eggs well in a large bowl; add sugar, corn oil, and coconut flavoring, blending well.
  3. Sift together flour, baking soda, baking powder, and salt in a separate bowl.
  4. Add alternately the dry ingredients and buttermilk to the egg mixture, beating well after each addition.
  5. Fold in flaked coconut and chopped walnuts.
  6. Spoon the batter into the prepared pan.
  7. Bake for 1 hour and 15 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from oven immediately and pour hot Coconut Syrup over the hot cake.
