Ingredients

  • 3 egg whites
  • 3/4 cup sugar
  • 3/4 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Instructions

  1. Beat the egg whites until stiff, but not dry.
  2. Gradually add the sugar while beating.
  3. Mix baking powder with graham cracker crumbs and gently fold into the meringue mixture.
  4. Add vanilla and chopped pecans and fold to combine.
  5. Pour the mixture into a greased 9-inch Pyrex pie pan.
  6. Bake in a 350°F (175°C) oven for 25 minutes.
  7. Do not overbake; allow to cool.
  8. Spread Cool Whip over the cooled pie and refrigerate overnight.
