Nutty Vegetable Pilaf
Ingredients
- 1 Tbsp. vegetable oil ⓘ
- 2 c. coarsely chopped broccoli ⓘ
- 2 medium carrots, julienned ⓘ
- 1 medium onion, chopped ⓘ
- 1 c. sliced fresh mushrooms ⓘ
- 2 cloves garlic, minced ⓘ
- 1/2 tsp. dried thyme leaves ⓘ
- 1/2 tsp. dried basil leaves ⓘ
- 1/2 tsp. salt ⓘ
- 1/4 tsp. ground black pepper ⓘ
- 3 c. cooked brown rice (cooked in chicken broth) ⓘ
- 1/2 c. chopped pecans, toasted ⓘ
- 1/2 c. shredded Parmesan cheese (optional) ⓘ
Instructions
- Heat oil in large skillet over medium-high heat until hot.
- Add broccoli, carrots and onion.
- Cook and stir 5 to 7 minutes or until broccoli and carrots are tender and onion is beginning to brown. Add mushrooms, garlic, thyme, basil, salt and pepper.
- Cook and stir 2 to 3 minutes or until mushrooms are tender.
- Add rice and pecans; cook 1 to 2 minutes, stirring, until well blended and thoroughly heated.
- Just before serving sprinkle with cheese, if desired.
- Makes 6 servings.
