- Dissolve yeast in 1/4 cup warm water and let it activate.
- Combine quick oats, shortening, salt, brown sugar, scalded milk, and beaten eggs in a mixing bowl.
- Add the activated yeast and gradually mix in 3 1/4 to 4 cups of flour to form a soft dough.
- Knead the dough until smooth, cover, and let it rise until doubled in size, about 1 hour.
- Roll out the dough into a rectangle, spread with 1/4 cup butter, and sprinkle with brown sugar and cinnamon.
- Roll up the dough tightly and cut into individual buns.
- Place the buns in a greased baking dish, let them rise again until puffy, about 30 minutes.
- Bake at 350°F (175°C) for 30 to 35 minutes until golden brown.
- Serve warm, optionally drizzled with melted butter or icing.
