Ingredients

  • 2 cups quick oatmeal
  • 2 eggs
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon vanilla
  • 1/2 teaspoon baking soda
  • 2 cups Recip-ease or Jiffy mix
  • 1/2 stick soft oleo
  • 3/4 cup sugar
  • 1/2 cup milk

Instructions

  1. Measure oatmeal into a bowl along with the melted butter, eggs, and milk.
  2. Add flavorings: salt, cinnamon, nutmeg, and vanilla.
  3. Stir well and let stand for 5 minutes.
  4. Add sugar and all remaining ingredients.
  5. Stir well to combine.
  6. Oil a loaf pan and pour the batter into it.
  7. Bake at 350°F for 30 minutes.
  8. Reduce heat to 325°F and continue baking for about 30 minutes, or until the bread tests done and is light brown.
  9. Cool completely before slicing.
