Okara Cookies
Ingredients
- 1 c Flour ⓘ
- 1/4 cup Whole bran cereal ⓘ
- 1 1/2 teaspoon Baking powder ⓘ
- 1/2 teaspoon Baking soda ⓘ
- 1/2 teaspoon Salt ⓘ
- 1/2 teaspoon Cinnamon ⓘ
- 1 cup Moist okara, loosely packed ⓘ
- 3 tablespoons honey ⓘ
- 1/2 cup Vegetable oil ⓘ
- 1 egg
- 1/4 cup yogurt or buttermilk ⓘ
- 1/3 cup raisins, chips or cut up dried fruit ⓘ
Instructions
- Combine flour, bran, wheat germ, baking powder, baking soda, salt, and cinnamon in medium-size bowl. Work in the okara with fork.
- Mix together and stir in honey and oil and egg. Add enough yogurt to make a moist dough that can be dropped from a spoon. Stir in raisins.
- Drop by tablespoonfuls onto lightly greased cookie sheet.
- Bake in a moderate (350 F) oven for 20 minutes or until golden brown.
