Ingredients

  • 2 lb. pork ribs
  • 2 (32 oz.) jars sauerkraut, drained
  • 2 yellow onions, peeled and cut in half
  • 2 tart green apples, cored and wedged
  • 1/4 cup brown sugar
  • 1 tablespoon caraway seed (optional)

Instructions

  1. Layer sauerkraut, onions, apples, brown sugar, and ribs into a large Dutch oven in that order.
  2. If using caraway seed, bury them evenly in the sauerkraut layer.
  3. Bring the mixture to a boil.
  4. Lower the heat, cover, and simmer gently for 2 to 3 hours, until ribs are very tender.
