Ingredients

  • 4 c. cooked, chopped chicken
  • 3 boiled eggs, chopped
  • 3/4 c. finely chopped celery
  • dash of onion powder
  • dash of white pepper
  • 2 tsp. fresh lemon juice
  • 1/2 to 3/4 c. mayonnaise
  • 1/2 c. chopped sweet pickle cubes

Instructions

  1. Combine cooked, chopped chicken, chopped boiled eggs, chopped celery, onion powder, white pepper, lemon juice, and chopped sweet pickle cubes in a bowl.
  2. Toss the ingredients well to mix.
  3. Fold in mayonnaise until evenly coated.
  4. Cover and chill for at least 2 hours to let flavors meld.
  5. Garnish with parsley and cherry tomatoes if desired.
  6. Optional: Slice an extra boiled egg thin and long, and place over the salad in the bowl.
  7. Chill until ready to serve in a lettuce-lined salad bowl.
