Ingredients

  • 1 c. cubed bacon
  • 1 medium onion, diced
  • 4 Tbsp. flour
  • 2 c. raw potatoes
  • 2 c. corn (fresh, canned, or frozen)
  • 2 c. water
  • 2 c. milk
  • 1 tsp. salt
  • 1/2 tsp. pepper

Instructions

  1. Saute bacon until crisp.
  2. Remove bacon from the pan and set aside.
  3. Fry diced onion in bacon fat until soft.
  4. Stir in flour and cook for 1 minute.
  5. Gradually add milk, stirring constantly until thickened.
  6. Cook potatoes and corn in water until potatoes are tender.
  7. Add the onion and gravy mixture to the potato and corn mixture.
  8. Add cooked bacon and seasonings (salt and pepper).
  9. Stir well and bring to a boil, then serve hot.
