Old Fashioned Northland Corn Chowder
Ingredients
- 1 large yellow onion, diced ⓘ
- 1 - 1 1/2 cup celery, diced ⓘ
- 2 tablespoons butter ⓘ
- 8 cups potatoes, peeled and diced ⓘ
- 16 ounces chicken broth ⓘ
- 4 cups water ⓘ
- 2 cups milk ⓘ
- 2 cups corn ⓘ
- 1 lb bacon, cooked crisp and diced ⓘ
- 6 eggs, hard boiled and diced ⓘ
- 2 tablespoons fresh parsley, chopped ⓘ
- 2 teaspoons salt ⓘ
- 1 teaspoon pepper ⓘ
Instructions
- In a Large stock pot :Saute the onion and celery in butter until soft.
- Add potatoes, chicken broth and water. Simmer for 25 minutes or until potatoes are cooked.
- Mash the potatoes just a little to make chowder thicker.
- Add milk, corn, bacon, and eggs.
- Sprinkle with parsley, salt, and pepper.
- Cover and simmer for 20 minutes.
- Serve warm.
