Ingredients

  • 1 can crushed pineapple (use juice)
  • 1/2 cup sugar
  • 2 small packages lemon Jell-O
  • 1 can cream
  • 1 (8 oz.) package cream cheese
  • Graham cracker crust
  • 1 cup water

Instructions

  1. Freeze the cream in the freezer for at least 3 hours before making the cheesecake.
  2. Drain the crushed pineapple, reserving the juice.
  3. In a saucepan, combine the pineapple juice, sugar, and lemon Jell-O. Bring to a boil and stir until dissolved.
  4. Allow the mixture to cool slightly.
  5. In a mixing bowl, beat the cream cheese until smooth.
  6. Add the cooled Jell-O mixture to the cream cheese and mix well.
  7. Fold in the crushed pineapple.
  8. Pour the mixture into a graham cracker crust.
  9. Refrigerate the cheesecake until set, about 4 hours or overnight.
