Ingredients

  • 2 c. white or yellow corn meal
  • 2 c. boiling water
  • 1/2 tsp. salt
  • 2 Tbsp. butter
  • 4 eggs
  • 1 c. milk

Instructions

  1. Butter a casserole dish.
  2. Slowly add meal and salt to boiling water and cook, stirring for 1 minute.
  3. Remove from heat and add butter, stirring well.
  4. Beat in eggs and milk until smooth.
  5. Pour the mixture into the prepared casserole dish.
  6. Bake at 400° for 25 minutes until golden brown.
