Ingredients

  • 24 eggs, hard-cooked
  • 2/3 cup mayonnaise
  • 1/4 cup minced pimiento-stuffed green olives
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • lettuce leaves

Instructions

  1. Day before serving or early in the day, cut the eggs in half lengthwise.
  2. Remove the yolks and place them in a small mixing bowl; mash the yolks.
  3. Add mayonnaise, minced green olives, oregano, salt, black pepper, and garlic powder to the mashed yolks.
  4. Mix well until smooth and creamy.
  5. Fill the egg whites with the yolk mixture.
  6. Cover and refrigerate until ready to serve.
  7. Just before serving, place the eggs on a platter lined with lettuce leaves.
